warm couscous salad

we have a great store just down the road with amazing, cheap produce. the problem with this is that i stock up and am never home to cook. this week i found myself home only 1 evening and realized i have loads of veggies to plow through before i leave to go out of town for a week. so, couscous salad it was.

WARM COUSCOUS SALAD (2 servings)

1/3 c couscous (prepared to box instructions)

while the couscous is cooking, it’s time for a little chopping. you can use any veggies you like, but this is what i had on hand.

red pepper
jalapeno
purple onion
garlic
zucchini
sun-dried tomatoes in oil

wash and chop veggies. while you’re chopping, heat up a skillet with a little oil and throw the garlic and onions in first. when they have sautéed for a few minutes, add other veggies (apart from sun-dried tomatoes), salt (i use herbamare herb salt, which is amazing) and pepper and saute to your liking.

fluff couscous with a fork and add sun-dried tomatoes and a little of the oil. add the rest of the veggies, a small handful of feta and you’re ready to go! fish or chicken would be an excellent accompaniment.

it’s after midnight and i leave in 7 hours for a flight, so i am off to pack!
