foodie friday: baked eggplant fries

dinners for me usually consist of soups or yogurt or perhaps a pizza from papa murphy’s if i’m really feeling lazy. but after a day of working, running errands and then a trip to the gym i came home super hungry and ready to cook! on the menu: salmon burgers on a bed of lettuce and baked eggplant fries.

BAKED EGGPLANT FRIES (adapted from shape magazine)

1 eggplant, cut into strips
1/3 c plain yogurt
1 t dried oregano
1/4 t garlic powder
1/4 t chili powder
1/4 t ground cumin
1/4 t onion powder
2 T fresh lemon juice
2 T apple cider vinegar
2 c breadcrumbs

preheat oven to 450 degrees. line two large baking sheets with parchment paper. cut the top and bottom off of the eggplant and cut it in half lengthwise and then into quarters. next, cut the eggplant slices into strips roughly the size of french fries. combine yogurt, oregano, garlic powder, chili powder, ground cumin, onion powder, lemon juice and apple cider vinegar in a large bowl. toss eggplant fries in yogurt mixture, coating evenly. place breadcrumbs on a plate and lightly coat eggplant fries with breadcrumbs. spread out evenly on trays making sure they don’t touch. Bake for 10-15 minutes or until golden brown and crispy (mine took about 20 minutes). turn halfway during baking to brown evenly. serve immediately!
