foodie friday: kale soup

while looking through old blog posts, i realized i mentioned kale soup a long while ago, but never got around to posting it. oops! as i was reading through those posts, i saw how as life has progressed and changed and has quite honestly has thrown me for some loops, the nature of posts have also changed. having a blog is personal and gives a glimpse into the everyday life of the author. and for my sake, food and music have been most of what i have had to offer these past months. and that’s okay. but perhaps it’s time to dust off creativity and bits and pieces of life that have been compartmentalized and shoved in the back of the closet. we’ll see. for now though, my grandmother’s kale soup will suffice.


2 c beef broth
4 c chicken broth
2 T butter
1/2 lb smoked sausage (the soup is actually great without it as well)
1 chopped onion
2 chopped carrots
1 lb potatoes
4 c chopped kale, stems removed
1 can kidney beans
1/2 cup chopped tomatoes (fresh or canned)
1 t chili seasoning
1/2 t allspice
1/2 t fennel

melt butter and cook sausage, saute onion. drain and set aside.
combine the broths and bring to a boil.
add carrots, potatoes, and kale to the broth. let simmer for 20 minutes.
add beans and tomatoes, onions, sausage and spices. simmer for 5-10 minutes and serve!

  1. haha, i looked for it too! the recipe i found instead didnt use the spices (except broth) and i didnt have any potatoes, but it was still good. i guess the spice would add that extra something… ill try this next time 🙂

  2. Josh here from the BlinkPack blog. I used to spend summers on Cape Cod and Fancy’s Farm Stand always had a pot going. It’s one of my best little memories of northern beach vacations. I tried to duplicate the recipe, which aside from the tomatoes is essentially what you have here. Thanks for the post. Cheers!
