foodie friday: molasses cookies.

fall is officially here. there is snow on the mountains, crisp fall air and tonight the organization i recently began working for threw a backyard party complete with picnic blankets, yummy food, fire pits and great company. i contributed with molasses cookies. nothing encompasses the taste of fall like these cookies.

molasses cookies
2/3 c oil
1 c sugar
1/4 c molasses
1 egg
2 c flour
2 t soda
1/2 t salt
1 t each – cloves, ginger, cinnamon
additional sugar to roll the dough in

preheat oven to 350F. mix ingredients in a medium-sized bowl and then roll the dough into balls (i like my cookies a little smaller, so i make my between 1-2 T). roll the balls in a small bowl of sugar and place on a cookie sheet. bake for 8-10 minutes and after removing them from the oven, let the rest for 1 minute. place on a cooling rack.
