foodie friday: yogurt blueberry pancakes

i have a confession to make. i have been staying up late watching “glee” every night this week. i can’t get enough of it! sometimes i think life would be much more manageable if we could sing and dance our way through it. but that would require knowing how to sing and dance, which would probably just add more frustration.

late night song and dance has pretty much wrecked me, so breakfast has just been thrown together in the mornings. but today the cool air and the reminder of a skype date woke me up early and after looking in the fridge, i decided to make yogurt blueberry pancakes.

2 eggs
2-4 T milk
3 T melted butter
1 c yogurt
1/2 t vanilla
1/2 c wheat flour
1/2 c white flour
1/4 c rye (i used ground flaxseed)
2 T sugar
1 T + 1 t baking powder
1/2 t salt
1 c blueberries

whisk eggs and yogurt together. add the other ingredients and mix until just blended. melt 1 T butter over a skillet and make pancakes. to keep the pancakes warm, heat the oven to 200F and place the pancakes on a cookie sheet while you are making the others. (if you have batter left, simply place in a plastic/glass container and put in fridge. it is good for up to two days)
add butter and syrup/agave syrup, a cup of coffee or two and enjoy!
