i was first introduced to coconut oil when i was in india several years ago. the local girls told us it was a great conditioner and while i believe them, i was unaware that i needed to rinse it out and my hair soon developed a rancid coconut odor. needless to say, i didn’t touch the stuff again until recently. now i use coconut oil for sauteing vegetables and as a replacement for oil in baking (although i have yet to try it on my hair again.).
i recently spent the evening with my niece and after putting her to bed, my mom and i adapted a banana bread recipe, using coconut oil:
2 c flour (whole wheat, almond, and/or coconut flour)
1/2 c brown sugar
1/2 c coconut oil
2 ripe bananas (mashed)
1/3 c milk
1 t vanilla
1/2 t salt
1 t baking soda
1/2 c chocolate chips and/or pecans
preheat oven to 350F (180C). grease the bottom of a loaf pan. in a large bowl, combine sugar and butter. beat until light and fluffy. add eggs and beat well. add bananas, milk and vanilla, mix. in a small bowl combine dry ingredients and mix well. add to banana mixture and stir until dry ingredients are just moistened. pour into pan. bake for 50-60 minutes or until toothpick comes out clean. cool 5 minutes and remove from pan. cool 1 hour (if you can make it that long!) and enjoy with a nice espresso or cup of coffee.
this bread is super light and fluffy. one piece is never enough!
