mango salsa

i don’t often post pictures of myself because most of my time i end up looking like my head isn’t screwed on or i’m channeling elvis presley, but this salsa deserved it. ragnhild and i spent an amazing evening at red rocks with devotchka and the avett brothers. i don’t remember the last time i’ve wanted to dance so badly, as well as play the banjo. music, nature and good friends are some of my favorite things in life, and tonight had them all.

but knowing we would spend much of the evening waiting for seats and for the show to begin, we packed a little picnic. thus… mango salsa – the perfect summer food.

mango salsa
1 ripe mango, peeled and diced
1/2 cucumber, peeled and diced
1/2 jalapeno, diced
1/4 small purple onion, diced
1/2 c cilantro, finely chopped
squeeze of lime
salt and pepper to taste

it’s pretty self-explanatory: chop everything up and enjoy! it’s great with chicken or fish, on salads or with chips. i’m a firm believer that cilantro is the key ingredient. this salsa is like summer in your mouth.

    tad jealous about the occasion. your head, face and everything look lovely in the photo. I agree, happily, that cilantro is a key ingredient…in any salsa, really. Glad you had fun.
