foodie friday: raspberry yogurt muffins

one thing i miss about norway is the ability to walk out the front door or down the road to pick fresh fruit. my sunday summer ritual was to walk through the woods and pick whatever berries were available. now i settle for heading to the store. my favorite store had raspberries for $1 a carton this past week, so i stocked up and have been looking for creative ways to use them. thus…


2 c flour (i used a mixture of white, wheat and flax)
1/3 c sugar
1 t baking powder
1 t baking soda
1/4 t salt
1/4 c orange juice (the batter seemed a bit dry, so i had 2 T extra)
2 T oil
1/2 t vanilla extract
8 oz plain yogurt (again, i added 2-4 oz, but just see how the batter looks before adding more)
1 egg
1 c raspberries

preheat oven to 400F and spray a 12-cup muffin tin with a non-stick spray. in a large bowl combine flour, sugar, baking powder, baking soda and salt. mix well. in another bowl, whisk together orange juice, oil, vanilla extract, yogurt and egg. (i also added a bit of grated lemon rind) add to dry ingredients and stir just until moistened. fold in berries. spoon into muffin cups. bake at 400º for about 20 minutes, or until golden.
