last thursday was norway’s national day and in lieu of that special day, i made boller – sweet buns. i also added a square of norwegian milk chocolate in the center of each. yum! if i couldn’t see and experience norway on that day, i could at least have a taste. these area quite easy to make and even easier to enjoy!

BOLLER

5 dl milk
100 gr butter
1.5 dl sugar
1 pkg yeast
1 egg
1 tsp cardamom
.5 tsp salt
750 gr white flour (more or less depending on the dough)

melt the butter and milk together until warm to the fingertip. add the sugar and whisk, trying to rid the mixture of the sugar granules.

in a large bowl, mix together the flour and yeast. pour the butter mixture over and add 1 egg. (if you like you could also add raisins at this stage) mix together and knead until the dough is not sticky and keeps it shape. (if you poke it with your fingertip, it should spring back). cover the bowl and let it rise until double, about 30 minutes.

when it has doubled in size, shape the dough into a long “snake.” cut it into ca. 12 pieces, depending on the size you wish. (at this stage i usually add chocolate to the dough). roll the dough lightly in the palm of your hand until it is an even ball. place the buns on a lined baking sheet and let raise again for ca. 45 minutes. (do not skip this step!) when it finishes raising, whisk 1 egg and lightly glaze the dough with the egg.

bake at a preheated oven – 225C for 10-12 minutes. remove immediately from pan and let cool on a wire rack.

i now have internet at my house and i don’t know if i’m more happy because of that or the fact that i set it up without any help

this now means that i have ample time to waste catch up on blogs and videos. i ran across this beauty of a video of oslo in the spring. i miss oslo (norway in general) and have a bit of wanderlust. or maybe it’s just the longing for home and familiarity? either way, this video reminds me of friends and places i love.

i’m soaking up my time in norway (which is flying by way too quickly, i might add). life these days is spent going from one cup of coffee to another, conversation to conversation, home to home – and i’m loving every moment. i’m acutely aware how wonderful my friends are and even now, i’m seeing and experiencing that in a different and larger perspective. i am crazy blessed.

several friends have opened their homes to me on this trip and this past week, as my friend janne and her family were away at work and preschool, i found myself alone in the house for a few hours. i realized this was one of the first times in months that i had been truly alone. and for an introvert like myself, i soaked it up. so i bought a sweet pastry, made a cup of coffee and read several chapters in a new book. after those few hours alone, i was ready for for the world again. here’s to the little things in life that bring heaps of joy.

you know those places/times in life when you can just relax and be yourself? i often feel that i am in such a rush to get life “right:” be in the right place, have the right job, be in the right relationships. it can be tiring, but i am in such a place now that i can simply be myself. after 3 smooth flights and a day of traveling, i’m in norway. and i feel the most “me” that i’ve felt since i left 5 months ago. (what a nice feeling!) it feels so normal to be with friends, baking, drinking coffee, trudging through the snow to get anywhere and everywhere. the trip began on a somber note and once again i was reminded that life is fragile. so i am going to enjoy every minute and make the most of my days here.

in less than 2 days i’ll be back in norway! it seems a bit surreal, yet so natural. i can’t wait to see friends, familiar sights, hear norwegian and after an unseasonably warm winter in kansas, the snow and cold will be welcomed with open arms.
i feel like i spend a good part of my life packing and unpacking, yet i always tend to wait for the last minute. so tonight will be spent doing laundry, altering a few items of clothing and determining what to pack in limited space.
